Lemon Herb Garlic Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper, to taste
  • Lemon slices (for garnish)
  • Fresh herbs (for garnish)

Instructions:

  1. Prep the Chicken:
    • Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
  2. Marinate the Chicken:
    • In a bowl, combine olive oil, minced garlic, lemon zest, lemon juice, parsley, thyme, and rosemary. Mix well.
    • Place the chicken breasts in a ziplock bag or a shallow dish and pour the marinade over them. Massage the marinade into the chicken to ensure even coating. Let it marinate for at least 30 minutes (or up to 2 hours for more flavor).
  3. Cook the Chicken:
    • Heat a large skillet over medium heat and add a drizzle of olive oil.
    • Remove the chicken from the marinade and sear the chicken breasts in the skillet for 5-6 minutes per side until golden brown and cooked through. The internal temperature should reach 165°F (75°C).
  4. Serve:
    • Remove the chicken from the skillet and let it rest for a few minutes before serving.
    • Garnish with lemon slices and fresh herbs for a bright, flavorful presentation.

Serving Suggestions:

Serve the chicken alongside roasted vegetables, mashed potatoes, or a light salad. You can also drizzle any leftover pan juices over the top for added flavor!
