Avocado Toast with Poached Eggs and Sriracha Drizzle

Ingredients:

  • 2 slices of whole grain or sourdough bread, toasted
  • 1 ripe avocado
  • 2 eggs
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste
  • A pinch of red pepper flakes (optional)
  • Fresh cilantro or parsley (for garnish)
  • Sriracha sauce, to taste

Instructions:

  1. Toast the Bread:
    • Lightly toast the slices of bread until they’re golden and crisp.
  2. Prepare the Avocado:
    • Mash the avocado in a small bowl.
    • Add lemon juice, salt, pepper, and red pepper flakes (if using), and mix well.
  3. Poach the Eggs:
    • Bring a small pot of water to a gentle simmer.
    • Crack each egg into a small bowl.
    • Stir the simmering water gently to create a whirlpool, then carefully slide one egg into the center. Cook for 3-4 minutes for a soft yolk or longer if you prefer a firmer yolk.
    • Repeat with the second egg.
    • Remove the eggs with a slotted spoon and set them aside.
  4. Assemble the Toast:
    • Spread the mashed avocado evenly over the toasted bread.
    • Place a poached egg on top of each slice.
  5. Garnish and Serve:
    • Drizzle the toast with Sriracha for a spicy kick.
    • Garnish with fresh cilantro or parsley for added freshness.
    • Add extra salt, pepper, or red pepper flakes as desired.
