Creamy Garlic Parmesan Shrimp Pasta

Ingredients:

  • 12 oz (340g) fettuccine or spaghetti
  • 1 lb (450g) large shrimp, peeled and deveined
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Cook the Shrimp:
    • In a large skillet, heat olive oil over medium heat.
    • Add the shrimp, season with salt, pepper, and Italian seasoning. Cook for about 2 minutes on each side, until the shrimp are pink and cooked through.
    • Remove the shrimp from the skillet and set aside.
  3. Make the Creamy Sauce:
    • In the same skillet, melt the butter over medium heat.
    • Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.
    • Stir in the heavy cream and broth. Bring to a simmer and cook for 3-4 minutes, allowing the sauce to thicken slightly.
    • Gradually whisk in the grated Parmesan cheese, stirring until melted and smooth.
  4. Combine Everything:
    • Add the cooked pasta to the skillet with the sauce and toss to coat the noodles evenly.
    • Return the shrimp to the skillet and gently mix it into the pasta and sauce.
    • Season with more salt and pepper if needed.
  5. Garnish and Serve:
    • Serve the pasta immediately, garnished with fresh parsley and a squeeze of lemon juice.
    • Add extra Parmesan on top if you like a cheesier dish.
