Sweet Potato and Spinach Frittata

  • Ingredients:
    • 1 medium sweet potato (peeled and diced)
    • 2 cups fresh spinach
    • 6 eggs
    • 1/4 cup milk (or non-dairy alternative)
    • 1/2 cup shredded cheese (optional)
    • 1 small onion (chopped)
    • Salt and pepper to taste
    • Olive oil for cooking
  • Instructions:
    1. Preheat the oven to 375°F (190°C).
    2. Heat a skillet with olive oil and sauté the onion and diced sweet potato until tender.
    3. Add spinach and cook until wilted.
    4. In a bowl, whisk together the eggs, milk, salt, and pepper.
    5. Pour the egg mixture over the vegetables in the skillet.
    6. Sprinkle cheese on top (if using).
    7. Transfer the skillet to the oven and bake for 10-15 minutes until the frittata is set and slightly golden.
