- Ingredients:
- 1 medium sweet potato (peeled and diced)
- 2 cups fresh spinach
- 6 eggs
- 1/4 cup milk (or non-dairy alternative)
- 1/2 cup shredded cheese (optional)
- 1 small onion (chopped)
- Salt and pepper to taste
- Olive oil for cooking
- Instructions:
- Preheat the oven to 375°F (190°C).
- Heat a skillet with olive oil and sauté the onion and diced sweet potato until tender.
- Add spinach and cook until wilted.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture over the vegetables in the skillet.
- Sprinkle cheese on top (if using).
- Transfer the skillet to the oven and bake for 10-15 minutes until the frittata is set and slightly golden.
