- Ingredients:
- 1/2 cup rolled oats
- 1 cup coconut milk (or water)
- 1/4 cup fresh blueberries
- 1 tablespoon shredded coconut
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon vanilla extract
- A pinch of salt
- Instructions:
- Bring the coconut milk (or water) to a boil in a small pot.
- Add oats and a pinch of salt, then reduce the heat to simmer. Cook for 5-7 minutes, stirring occasionally.
- Once the oats are creamy, stir in the vanilla extract and sweetener.
- Top with fresh blueberries and shredded coconut before serving.
