Chickpea and Avocado Salad Wrap

Ingredients:

  • 1 can chickpeas (drained and rinsed)
  • 1 ripe avocado
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh spinach leaves
  • Whole wheat tortillas or wraps

Instructions:

  1. In a bowl, mash the chickpeas and avocado together until combined but still chunky.
  2. Stir in the lemon juice, olive oil, salt, and pepper.
  3. Spread the chickpea mixture on a tortilla, add fresh spinach leaves, and wrap it up.
  4. Serve with a side of fresh veggies or chips
