Blueberry Coconut Oatmeal

  • Ingredients:
    • 1/2 cup rolled oats
    • 1 cup coconut milk (or water)
    • 1/4 cup fresh blueberries
    • 1 tablespoon shredded coconut
    • 1 tablespoon honey or maple syrup
    • 1/2 teaspoon vanilla extract
    • A pinch of salt
  • Instructions:
    1. Bring the coconut milk (or water) to a boil in a small pot.
    2. Add oats and a pinch of salt, then reduce the heat to simmer. Cook for 5-7 minutes, stirring occasionally.
    3. Once the oats are creamy, stir in the vanilla extract and sweetener.
    4. Top with fresh blueberries and shredded coconut before serving.
