Ingredients:
- 4 boneless, skinless chicken breasts
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon (zested and juiced)
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper, to taste
- Lemon slices (for garnish)
- Fresh herbs (for garnish)
Instructions:
- Prep the Chicken:
- Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
- Marinate the Chicken:
- In a bowl, combine olive oil, minced garlic, lemon zest, lemon juice, parsley, thyme, and rosemary. Mix well.
- Place the chicken breasts in a ziplock bag or a shallow dish and pour the marinade over them. Massage the marinade into the chicken to ensure even coating. Let it marinate for at least 30 minutes (or up to 2 hours for more flavor).
- Cook the Chicken:
- Heat a large skillet over medium heat and add a drizzle of olive oil.
- Remove the chicken from the marinade and sear the chicken breasts in the skillet for 5-6 minutes per side until golden brown and cooked through. The internal temperature should reach 165°F (75°C).
- Serve:
- Remove the chicken from the skillet and let it rest for a few minutes before serving.
- Garnish with lemon slices and fresh herbs for a bright, flavorful presentation.
Serving Suggestions:
Serve the chicken alongside roasted vegetables, mashed potatoes, or a light salad. You can also drizzle any leftover pan juices over the top for added flavor!
